Some people have a fixed idea that saturated fats, especially lard, equals clogged arteries. Before Crisco was invented, everyone cooked with lard or tallow, and it wasn't considered bad. After Crisco (which is trans fat) was invented, it was marketed as a healthier substitute to lard and tallow (which are saturated fats). However, trans fats were banned by the FDA in 2015. Saturated fats: • Lard • Tallow • Butter • Coconut oil * Saturated fats are very stable and cause less oxidation and free radical damage. They are also meant to be used at higher temperatures. Rendering lard's really quite easy. It's used in a lot of Cantonese dishes and is an awesome frying oil for vegetable and tofu. As promised, here's the recipe for the lard: Ingredients for the lard: - 1 kg fatback or belly fat (猪板油) - 1 cup of water - Optional: 1/2 tbsp salt (will help the lard keep at room temperature, we didn't use it) Process for rendering lard: - Make sure there's no meat attached, and cut fat into 1 inch pieces, a little bigger or smaller's fine. - Add into a claypot or cast iron pot together with the water (and salt, if using). - Bring the water to a boil. Let it bubble away, just make sure it's not going *too* crazy. - Right as it's almost totally evaporated away, turn the heat to the lowest it'll go. Move around your fat pieces, stirring to make sure they don't stick to the bottom. This should likely be ~5 minutes. - Once the fat's started to release its oil, you're basically in the clear and you can step away. - Still over low flame, let that bubble away and render out for 30-60 minutes. Just check on it every once in a while to make sure nothing's sticking or going crazy. - Strain and save. How To Render Pork Lard at home. Use Pure Pork Lard anywhere you would use vegetable shortening in baking cakes or pie pastry. Rendered Pork Leaf Lard is completely flavour neutral and won't add any flavour to your baking, but lard will give you the flakiest pie crust ever! Home rendered pork lard is also great for frying and deep frying. The leaf lard we are making here today is about the consistency of butter at room temperature. When rendering leaf lard from pig fat, I just chop it coarsely, no need to grind it fine, you can if you really believe it needs to be done... but I don't, my Grandmother didn't and it's always fantastic. Another piece of advice that most give is to put water in the bottom of the pot - "so it won't burn" - no need for that either... you are setting your oven at 225ºF to 250ºF and pork fat doesn't start to smoke until over 400ºF. So unless your oven is waaaaaaay off there is no real danger of it burning. Adding water just causes problems later because you need to boil it off. A scientist in the 50s omitted information from a study, which led to a false conclusion. This then started a campaign to get millions of people to stop consuming fat. Recently, the new dietary guidelines finally changed their viewpoint on cholesterol and fats. It now says that increased cholesterol does not increase the risk of heart disease. The problem with seed oils is that when you cook them, you create trans fats. When you reheat them, you also create more trans fats. Trans fats can cause some serious damage. When you combine trans fats with heat and with carbohydrates or starches, you get another toxic chemical and other things that cause proteins to become very sticky.
